Ingredients

  • 2 medium delicata squash (about 2 pounds total)
  • 2 tablespoons extra virgin olive oil, tallow, or coconut oil.
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/8 to 1/4 teaspoon cayenne pepper (use less for mild spice or substitute black pepper)
  • 1/2 teaspoon sea salt
  • Optional toppings: chopped toasted pecans or walnuts, dried cranberries, or fresh herbs like thyme, sage, or rosemary

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with extra virgin olive oil, talllow, or coconut oil
  2.  Wash the squash well and trim both ends. Slice each squash in half lengthwise and scoop out the seeds with a spoon. Lay each half cut side down and slice into half-moons about 1/2 inch thick.
  3. Place the squash slices in a large bowl. In a small bowl, whisk together olive oil (or coconut oil/tallow melted), maple syrup, cinnamon, cayenne, and salt. Drizzle over the squash and toss until evenly coated.
  4. Arrange the slices in a single layer on the baking sheet, giving them space to roast properly. Bake for 18 to 25 minutes, flipping halfway through, until golden and tender when pierced with a fork.
  5. Top with nuts, cranberries, or herbs before serving if desired. Serve warm as a side to roasted meats, poultry, or seasonal salads.

  • No need to peel delicata squash. The skin is thin, edible, and adds both fiber and texture. Just give it a good scrub.
  • For a deeper caramelized flavor, use a dark-colored baking sheet.
  • Swap maple syrup for raw honey if you prefer a slightly different sweetness.
